Honey Mustard Chicken Salad with Avocado Turkey Bacon amp Goat Cheese
The Salad You’ll Be Dreaming About: Honey Mustard Chicken Salad Madness!
Alright, so, do you ever just crave a salad that feels like a hug but also has all those tasty vibes? Like, something hearty but not too heavy? Well, lemme tell ya, this Honey Mustard Chicken Salad with Avocado, Turkey Bacon & Goat Cheese is IT. 🥗✨

Okay, Let’s Talk Ingredients
So, I’m in the grocery store, right? And I’m basically throwing things into my cart like a wild woman. Honey (gotta have that sweetness), Dijon mustard (sassy!), olive oil, vinegar—it’s a party! Then, I grab garlic because, duh, it’s life. Oh, and chicken—like, a pound of it, preferably whatever’s on sale.
And then there’s the toppings! Avocado, ’cause who doesn’t want that creamy goodness? Turkey bacon—OMG, yes! I mean, crispy bits of joy. Tomatoes? Check. Corn? Heck yes. Red onion? Just a little zing. And goat cheese to top it off, if you’re feeling fancy. (But honestly, I’ve skipped it before and it’s still delish!)
So Here’s Why I Make This Constantly
Okay, so picture this: It’s a hot summer day, and I’m stuck in the kitchen because I decided to make lunch for the crew (big mistake?). Anyway, I’m sweating like crazy, and I don’t want to turn on the oven. Enter this salad.
I stumbled onto it via some random Pinterest rabbit hole—y’know the one?—and it was a game changer. Everyone loved it! My sister was like, “Can we have this every week?” and I said, “Sure, but you’re making it next time!” 😂 Seriously though, it’s become a staple. It’s easy, bright, and fills you up without feeling like you’ve just sunk a ship.
(Another beautiful shot because we can’t get enough!)
The One Trick That Changes Everything
Okay, major pro tip: marinating the chicken! Like, you can totally skip this, but if you don’t, you’re missing out on that flavor explosion. Just toss that chicken in a bit of the dressing for at least 30 minutes (or longer if you wanna be a hero), and OMG, it’s sooo worth it. You’ll be munching on basically little bites of heaven.
Don’t Mess This Up (My Top Tips)
– Watch the bacon! Seriously, I burnt mine once and it was a sad day. Just keep an eye on it, and set a timer if you need to.
– Don’t overdo the dressing! Like, you want it to coat everything, but if you drown it, it’s a soggy mess.
– Chop stuff evenly! I mean, it’s a salad, but if your avocado is in huge chunks and your tomatoes are tiny, it’s gonna be super weird to eat.
How to Keep Them From Disappearing (Or, How to Store Them)
Okay, if you wanna save leftovers (which is a big “if”—because it’s seriously addicting), keep the dressing separate till you’re ready to eat again. I just toss everything in a big ol’ Tupperware and layer it, but the dressing should totally chill out on the side. Otherwise, it’ll be a sad, squishy salad the next day. No one wants that!
If You Liked This, You’ll Probably Like These Too
If you’re vibing with this salad, you’ll probably love my Mediterranean Quinoa Bowl (seriously toss in all the feta!) or my BBQ Chickpea Salad (which is a smoky, sweet delight!). Oh, and don’t sleep on the Classic Caprese—that one is fresh and fabulous!
