Chocolate Smores Cheeseball

S’mores Bliss in Cheeseball Form! 🍫🔥

Hey, have you ever just been hit with a craving for s’mores but it’s, like, 2 AM and you’re in your PJs? 🤔 I totally get that, and that’s exactly how this whole Chocolate S’mores Cheeseball thing came to life. I mean, who doesn’t want a cheesy, chocolatey, marshmallowy treat that you can just dip into? *YES, PLEASE.*

Okay, Let’s Talk Ingredients

Alright, here’s the deal. You’re gonna need some cream cheese (8 oz, but make sure it’s at room temp, trust me on this), some marshmallow fluff (⅓ cup), and a bit of semi-sweet baking chocolate. I used Scharffen Berger—fancy, I know, but it’s worth it! You’ll also need vanilla extract, a teeny bit of salt, powdered sugar (½ cup), and, of course, the good stuff: mini marshmallows and chunky chocolate bits. It’s basically a chocolate party in your bowl!

So Here’s Why I Make This Constantly

Okay, so picture this: I made this cheeseball for my niece’s birthday party last summer. The kids were, like, bouncing off the walls (classic, right?), and I thought, “Let’s whip up something that’ll keep them busy!” So, I made this and literally watched as they devoured it like it was the last s’more on earth. It was hilarious and kind of magical. I mean, who knew mixing cream cheese and chocolate could cause such joy?! 😂 Plus, it was super easy and I had most of the stuff in my pantry. Winning!

The One Trick That Changes Everything

Here’s the secret: when you’re melting that chocolate (you’ll need to melt 1 oz first), do it slow and steady! Like, seriously, 30 seconds at a time in the microwave? Game changer! Make sure you stir it in between. I’ve burned chocolate before — not cute. 😬

Don’t Mess This Up (My Top Tips)

1. Room Temp Cream Cheese: Seriously, don’t skip this. If it’s cold, the mixture will be lumpy and sad.
2. Chill Time: Don’t rush it! Let that cheeseball chill for at least 1-2 hours. It makes a HUGE difference in texture.
3. Chocolate Coating: When you roll it in chocolate, use your hands! It’s messy but worth it. Make sure to get an even coating!

How to Keep Them From Disappearing (Or, How to Store Them)

You can wrap that beaut up tight and keep it in the fridge for about 24 hours. But trust me, it’ll probably be gone way before that! If you want the best experience, let it sit out for a bit before serving. Room temp = perfect dip-ability!

If You Liked This, You’ll Probably Like These Too

If you’re digging this cheeseball vibe, you gotta try my Peanut Butter Cup Cheeseball or the classic Spinach Artichoke Dip. Both are perfect for parties (or just random Tuesday nights, no judgment)!

Yield: 12 servings servings

Ingredients

  • 8 ounces (226g) cream cheese (room temperature)
  • ⅓ cup marshmallow fluff
  • 4 ounces (57g) semi-sweet baking chocolate (I used Scharffen Berger, divided)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup (57g) powdered sugar
  • ½ cup semi-sweet baking chunks (I used Scharffen Berger, coarsely chopped)
  • ½ cup mini marshmallows
  • Instructions

    1. Beat cream cheese and marshmallow fluff until smooth. Melt 1 ounce of semi-sweet baking chocolate in a microwave safe bowl on 50% power in 30 second increments, stirring between each, until melted and smooth. Beat into cream cheese mixture, then add vanilla, salt, and powdered sugar. Mix until smooth. Stir in chopped baking chunks and marshmallows.
    2. Line a small bowl with plastic wrap (cereal bowl size). Transfer cheese ball mixture to the bowl and pack to compress, then wrap in plastic. This will form the “ball” shape. Chill at least 1-2 hours before continuing.
    3. Finely chop the remaining 3 ounces of baking chocolate. Spread on a cutting board. Remove the cheese ball from the refrigerator. Remove plastic and place on chocolate pieces. Roll to press the chocolate all over the cheeseball, using your hands to form a ball shape.
    4. Serve immediately with grachicken ham crackers, or wrap well and chill for up to 24 hours. (Best served after it’s sat at room temp for about 30 minutes.)
