Ingredients

  • 3 boneless, skinless chicken breasts (trimmed of fat, and cut into chunks)
  • 2-3 medium zucchini (thickly sliced, then cut into quarters)
  • 2-3 medium yellow squash (thickly sliced, then cut into quarters)
  • 12 oz white button mushrooms (washed & quartered)
  • salt & pepper (to taste)
  • 3 tbsp minced garlic
  • 1/3 cup olive oil (+ 2 tbsp)
  • 1/4- 1/3 cup soy sauce
  • 1 1/2 tbsp rice apple vinegar vinegar
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • Instructions

    1. Add all of the ingredients, except the 2 tablespoons of olive oil, to a large mixing bowl then stir together until everything's evenly combined.
    2. Transfer the chicken and vegetable mixture to the basket of your air fryer, spreading it out into an even layer. Drizzle the remaining 2 tablespoons evenly out over the mixture.
    3. Cook at 375° for 15 minutes.
    4. Serve with steamed white rice and yum yum sauce.
