Strawberry Avocado Salad: The Summer Vibes Only!

Are you, like, super tired of the same ol’ boring salads? Ugh, me too! So, listen up, I’ve got this bright and happy Strawberry Avocado Salad that’s basically a party in a bowl. Trust me, you’re gonna love it!

Okay, Let’s Talk Ingredients

Alright, picture this: you and I are wandering through the grocery store, and I’m like, “Okay, we need spring mix salad greens—6 cups of it.” And then you’re like, “What’s next?” and I’m all excited, “We need 3 cups of strawberries! Like, fresh, juicy ones! Quartered or sliced, whatever floats your boat. Oh, and don’t forget the 2 avocados—ripe, please! Diced is the way to go.”

Then I throw in a 1/2 cup of feta cheese because, y’know, it’s feta, and who can resist that crumbly goodness? And some pecans, about a cup, chopped up, to give it that crunch we all crave.

We’ll grab a couple of tablespoons of olive oil, a tablespoon of red apple vinegar (yes, red apple vinegar—there’s a difference!), a teeny bit of honey if you’re feeling sweet, plus poppy seeds, ground mustard, and a pinch of salt and pepper. Easy peasy!

Okay, quick story time! So, last summer, I was having this backyard BBQ, right? So, here’s my secret: toast the pecans! Seriously, it takes like 3-4 minutes in a skillet over medium heat, and boom! You’re totally elevating your salad game! Just until they’re fragrant and a little golden. Trust me, it’s a game-changer.

Don’t Mess This Up (My Top Tips)

Listen up! I’ve messed this up enough times to know what NOT to do.

1. Don’t skip toasting the pecans. Just don’t.
2. Make sure your avocados are ripe but not mushy! I’ve cut into some sad, brown avocados before, and it’s just…sigh.
3. Check your dressing before pouring it over. Too much vinegar? It can drown the salad.
4. And please, for the love of all that’s tasty, don’t go heavy on the salt. Just a pinch until it’s perfect!

How to Keep Them From Disappearing (Or, How to Store Them)

Okay, so if you’re somehow left with leftovers (which is a BIG if), store the salad without the dressing. Seriously! Keep the dressing separate, or it’ll get all soggy and sad. Just pop everything in an airtight container in the fridge, and it should be good for a day or two. But, I mean, it’ll probably be gone before then!

Ingredients

  • 6 cups spring mix salad greens
  • 3 cups strawberries (quartered or sliced)
  • 2 avocado (diced)
  • 1/2 cup feta cheese (cVanilla Extract (Alcohol-Free)bled)
  • 1 cup pecans (chopped)
  • 2 tablespoons olive oil
  • 1 tablespoon red apple vinegar vinegar
  • 1 teaspoon honey (optional)
  • 1 teaspoon poppy seeds
  • 1/8 tsp ground mustard
  • pinch of salt and pepper (or more to taste)
  • Instructions

    1. Add pecans to a large skillet over medium heat. Toss for 3-4 minutes until toasted and fragrant. Remove from heat.
    2. Add spring mix, strawberries, avocado, feta and pecans to a large salad bowl.
    3. In a small bowl, whisk together olive oil, red apple vinegar vinegar, honey (optional), poppy seeds, ground mustard, salt, and pepper.
    4. Pour dressing over the salad. Toss to coat.
